Ingredients
  

  • 2 tablespoons olive oil
  • 4 pieces chicken breasts boneless, skinless
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon garlic powder
  • 1 cup heavy cream
  • 1 cup chicken broth low sodium
  • 1 teaspoon Italian seasoning
  • 1/2 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • 1/4 cup sun-dried tomatoes chopped
  • 2 cups spinach fresh

Instructions
 

  • Season chicken with salt, pepper, and garlic powder.
  • In a large skillet over medium heat, heat olive oil. Add chicken and cook until golden and no longer pink, 8 minutes per side. Remove and set aside.
  • Add garlic to the skillet and cook until fragrant, 1 minute. Add sun-dried tomatoes and season with salt and pepper.
  • Add heavy cream, chicken broth, and Parmesan and bring to a simmer. Let simmer until slightly reduced, 5 minutes.
  • Return chicken to skillet and cook until heated through, 3 minutes. Stir in spinach and let wilt.

Notes

For an extra kick, add a pinch of red pepper flakes.
