Ingredients
  

  • 2 avocados ripe but firm, sliced into wedges
  • 1 cup breadcrumbs panko
  • 1/2 cup Parmesan cheese grated
  • 2 tablespoons flour
  • 2 eggs beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Slice the avocados into wedges.
  • Prepare three bowls: one with flour, one with beaten eggs, and one with a mix of panko breadcrumbs and Parmesan.
  • Dip each avocado slice in flour, then egg, and finally the breadcrumb mixture.
  • Arrange the coated slices on the baking sheet in a single layer.
  • Bake for 15-20 minutes, flipping halfway through, until golden and crispy.
