Ingredients
2 cups all-purpose flour
1 tablespoon cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup vegetable oil
1 cup granulated sugar
2 large eggs
1 tablespoon red food coloring
1 teaspoon vanilla extract
Powdered sugar for dusting
Instructions
1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
3. In a large bowl, mix the vegetable oil and granulated sugar until well combined.
4. Add the eggs, red food coloring, and vanilla extract to the oil mixture and stir until blended.
5. Gradually add dry ingredients to the wet mixture and mix until just combined.
6. Refrigerate dough for about 30 minutes to help it firm up.
7. Once chilled, scoop tablespoons of dough and roll into balls. Roll each ball in powdered sugar until fully coated.
8. Place on prepared baking sheets about 2 inches apart.
9. Bake for 10-12 minutes or until edges are set but centers are still soft.
10. Allow to cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
