Ingredients
4 bone-in, skin-on chicken thighs
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
2 tablespoons olive oil
Instructions
1. Preheat the oven to 425°F (220°C).
2. Pat the chicken thighs dry with paper towels to remove excess moisture.
3. In a small bowl, mix together salt, pepper, garlic powder, onion powder, and smoked paprika.
4. Rub the spice mixture all over the chicken thighs, ensuring even coverage.
5. Heat olive oil in a large oven-safe skillet over medium-high heat.
6. Once the oil is hot, add the chicken thighs skin-side down and sear for about 5-7 minutes until golden brown and crispy.
7. Flip the chicken thighs over and transfer the skillet to the preheated oven.
8. Bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
9. Remove from the oven and let rest for 5 minutes before serving.
Notes
For extra crispiness, make sure to dry the chicken thoroughly before seasoning. You can also use a wire rack in the oven for better air circulation.
