Homemade Egg Noodles: Easy Recipe for Perfect Pasta

    Ingredients

    – 2 egg yolks
    – 1 egg
    – 1 cup all-purpose flour (plus extra for dusting)
    – 1/2 teaspoon salt
    – Water (as needed)

    Instructions

    1. In a large mixing bowl, combine the flour and salt. Make a well in the center of the flour mixture.
    2. Crack the whole egg and separate the yolks from the two egg yolks. Add the eggs to the well in the flour.
    3. Using a fork, gently whisk the eggs to mix them, gradually incorporating the flour from the edges of the well until the dough starts to come together.
    4. If the dough is too dry, add a few drops of water until you achieve a smooth and slightly tacky texture.
    5. Transfer the dough to a floured surface and knead it for about 5-10 minutes until it’s elastic and smooth.
    6. Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
    7. Once rested, roll the dough out with a rolling pin to your desired thickness, dusting with extra flour as needed to prevent sticking.
    8. Cut the rolled dough into thin strips to form your noodles. You can also use a pasta cutter for even shapes.
    9. Allow the noodles to dry for about 10-15 minutes before cooking them in boiling salted water for 2-4 minutes, depending on the thickness of your noodles.
