Ingredients
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1/2 cup crushed candy canes
Red and green food coloring (optional)
Instructions
1. Preheat your oven to 350°F (175°C).
2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
4. Beat in the egg, vanilla extract, and peppermint extract until well combined.
5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
6. Divide the dough into two portions; leave one portion plain and color the other with red or green food coloring as desired.
7. Fold in crushed candy canes into both doughs.
8. Take small amounts of each colored dough and roll them together to form a twisted shape for each cookie.
9. Place cookies on a parchment-lined baking sheet and bake for 10-12 minutes or until edges are lightly golden.
10. Let cool on the pan for a few minutes before transferring to a wire rack to cool completely.

You can adjust the amount of crushed candy canes based on your preference for minty flavor.
