4 salmon fillets (6 oz each)
2 cups fresh spinach, chopped
1 cup heavy cream
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
1/2 cup grated Parmesan cheese
Instructions
1. In a large skillet over medium heat, heat the olive oil and sauté the minced garlic until fragrant (about 1 minute).
2. Add the chopped spinach and cook until wilted (about 3-4 minutes).
3. Pour in the heavy cream and bring to a gentle simmer.
4. Stir in the salt, pepper, nutmeg, and Parmesan cheese until smooth.
5. Season the salmon fillets with salt and pepper.
6. In another skillet, sear the salmon fillets for about 4-5 minutes per side until cooked through and golden brown.
7. Serve the salmon topped with the creamy spinach sauce.
Notes
You can substitute fresh spinach with frozen spinach; just make sure to thaw it and drain excess water before adding it to the sauce. For added flavor, consider squeezing fresh lemon juice over the salmon before serving.
