Ingredients
For the Pineapple Topping:
1 cup of brown sugar
1/4 cup of butter (melted)
1 can (20 oz) of sliced pineapple (drained)
1/2 cup maraschino cherries
For the Cinnamon Rolls:
2 1/4 cups all-purpose flour
1/4 cup granulated sugar
1 packet (2 1/4 tsp) instant yeast
1/2 tsp salt
1/2 cup milk (warmed)
1/4 cup butter (melted)
2 large eggs
1 tbsp ground cinnamon
1/2 cup brown sugar
Instructions
1. Preheat the oven to 350°F (175°C).
2. In a 9×13 inch baking dish, mix the melted butter and brown sugar until combined. Spread this mixture evenly in the bottom of the dish.
3. Arrange the drained pineapple slices on top of the brown sugar mixture and place a cherry in the center of each pineapple slice.
4. In a mixing bowl, combine flour, granulated sugar, instant yeast, and salt.
5. Add warm milk, melted butter, and eggs into the dry ingredients and mix until a dough forms.
6. On a floured surface, roll out the dough into a rectangle (about 12×18 inches).
7. Spread softened butter over the dough and sprinkle with brown sugar and cinnamon evenly.
8. Roll up the dough tightly from one long side to another, then cut into 12 equal pieces.
9. Place each piece cut-side down over the pineapple topping in the baking dish.
10. Bake for about 25-30 minutes or until golden brown.
11. Once baked, allow to cool for 5 minutes before inverting onto a serving platter.
Notes
This recipe can be made ahead by preparing the rolls and refrigerating them overnight before baking. Just allow them to come to room temperature before baking.
