Ingredients
4 boneless, skinless chicken breasts
1 cup of pineapple juice
1/2 cup of soy sauce
1/4 cup of brown sugar
1 tablespoon of minced garlic
1 tablespoon of grated ginger
1 teaspoon of black pepper
1/2 teaspoon of crushed red pepper flakes (optional)
Sliced green onions and sesame seeds for garnish
Instructions
1. In a bowl, mix together pineapple juice, soy sauce, brown sugar, minced garlic, grated ginger, black pepper, and crushed red pepper flakes to create the marinade.
2. Place the chicken breasts in a large resealable bag or shallow dish and pour the marinade over them. Seal or cover and marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).
3. Preheat your grill to medium-high heat.
4. Remove chicken from the marinade and discard the remaining marinade.
5. Grill the chicken for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F or 75°C).
6. Once cooked, remove from the grill and let rest for a few minutes before slicing.
7. Garnish with sliced green onions and sesame seeds before serving.
Notes
You can also bake the chicken in the oven at 375°F (190°C) if you prefer not to grill it. Just place it in a baking dish with some marinade and bake for about 25-30 minutes.
