Ingredients

– 1 cup granulated sugar
– 1 cup vegetable oil
– 4 large eggs, beaten
– 2 cups pecans, finely chopped
– 1 teaspoon vanilla extract
– 1 1/2 cups self-rising flour
– 1 teaspoon ground cinnamon
– 1 cup brown sugar
– 1/4 teaspoon salt

Instructions

1. Start by preheating your oven to 350°F (175°C). Prepare a 9×13-inch baking dish by greasing it with butter or a nonstick spray to prevent sticking.
2. In a large mixing bowl, combine the granulated sugar, brown sugar, beaten eggs, and vegetable oil. Blend these ingredients together until the mixture is smooth and creamy.
3. Gradually sift in the self-rising flour along with the salt and ground cinnamon, stirring gently until just combined. Be careful not to overmix.
4. Add in the vanilla extract to the batter, and then fold in the chopped pecans gently, ensuring they are evenly distributed throughout the mixture.
5. Carefully pour the batter into the prepared baking dish, spreading it out evenly so it bakes uniformly.
6. Place the baking dish in the preheated oven and bake for 30 to 35 minutes. To check for doneness, insert a toothpick into the center; it should come out mostly clean when the pecanbread is ready.
7. Once baked, allow the pecanbread to cool in the dish for at least 15 minutes before slicing into squares and enjoying.
