  • 1/4 cup Balsamic Vinegar
  • 2 tbsp Olive Oil
  • 3 cloves Garlic, minced
  • 1 Bell Pepper, chopped
  • 1 Zucchini, chopped
  • 2 cups Spinach
  • 12 tbsp Honey or Maple Syrup
  • Salt and Pepper to taste
  • Instructions

  • Marinate the chicken breasts in a mix of balsamic vinegar, olive oil, minced garlic, and a pinch of salt and pepper for 30 minutes.
  • Heat olive oil in a large skillet over medium heat. Sauté chopped bell peppers and zucchini until lightly tender, about 5-7 minutes. Toss in spinach until wilted, then remove veggies from the pan.
  • In the same skillet, add the marinated chicken (discard excess marinade) and cook about 5-7 minutes on each side until cooked through and golden brown.
  • Lower heat, add honey or your choice of sweetener to the remaining marinade, and let it simmer for a few minutes until thickened.
  • Return the sautéed veggies to the skillet, mixing them with the chicken and glaze until everything is evenly coated.
  • Serve on a platter garnished with fresh herbs like parsley.
