2 Chicken Breasts
1/4 cup Balsamic Vinegar
2 tbsp Olive Oil
3 cloves Garlic, minced
1 Bell Pepper, chopped
1 Zucchini, chopped
2 cups Spinach
1–2 tbsp Honey or Maple Syrup
Salt and Pepper to taste
Instructions
Marinate the chicken breasts in a mix of balsamic vinegar, olive oil, minced garlic, and a pinch of salt and pepper for 30 minutes.
Heat olive oil in a large skillet over medium heat. Sauté chopped bell peppers and zucchini until lightly tender, about 5-7 minutes. Toss in spinach until wilted, then remove veggies from the pan.
In the same skillet, add the marinated chicken (discard excess marinade) and cook about 5-7 minutes on each side until cooked through and golden brown.
Lower heat, add honey or your choice of sweetener to the remaining marinade, and let it simmer for a few minutes until thickened.
Return the sautéed veggies to the skillet, mixing them with the chicken and glaze until everything is evenly coated.
Serve on a platter garnished with fresh herbs like parsley.
