Ingredients
1 pound boneless skinless chicken breasts
1/4 cup balsamic vinegar
2 Tablespoons honey
1 clove garlic minced
1 Tablespoon olive oil
1 teaspoon Italian seasoning
1/4 teaspoon salt
pinch of pepper
1 cup cherry tomatoes
2 large tomatoes sliced
4 slices mozzarella cheese
chopped basil for garnish
Instructions
- Preheat oven to 400 degrees. Add the chicken to a 9×13 inch pan.
- In a small bowl, whisk together balsamic vinegar, honey, garlic, olive oil, Italian seasoning, salt, and pepper.
- Pour the mixture over the chicken and place cherry tomatoes on the side of the chicken. Top with sliced tomatoes.
- Bake for about 20-25 minutes until the internal temperature of the chicken reaches 165 degrees. Add mozzarella cheese for the last 5 minutes to melt.
- Garnish with fresh chopped basil if desired.
Notes
For optimal flavor, marinate the chicken in the balsamic mixture for 30 minutes before baking. You can also substitute the mozzarella with fresh burrata for a creamier texture.
