Ingredients
1/2 cup creamy peanut butter
1/2 cup all-purpose flour
1/4 cup granulated sugar
1 large egg
1/4 cup brown sugar, packed
1/4 teaspoon baking soda
1/2 teaspoon vanilla extract
Pinch of salt
Optional: 1/4 cup mini chocolate chips or chopped peanuts for extra texture
Instructions
1. Prepare the Dough: In a mixing bowl, add the creamy peanut butter, granulated sugar, brown sugar, and vanilla extract. Blend them together until you have a smooth mixture. Crack in the egg and mix again until well combined.
2. Combine Dry Ingredients: In another bowl, whisk the all-purpose flour, baking soda, and a pinch of salt together. Gradually stir the dry ingredients into the peanut butter mixture, making sure everything is well incorporated. If you’re adding chocolate chips or chopped peanuts, fold them in gently at this stage.
3. Shape the Cookies: Take small portions of the dough and roll them into balls about 1 to 1.5 inches wide. Place them on a flat surface and use a fork to flatten each ball slightly, creating a crisscross pattern on top.
4. Air Fry the Cookies: Preheat your air fryer to 350°F (175°C) for 3-4 minutes. Lightly grease the air fryer basket or use parchment paper to prevent sticking. Arrange the cookie dough balls in the basket, ensuring there’s space between them as they will spread a bit. Depending on your air fryer size, you may need to work in batches. Cook the cookies for 6-8 minutes, keeping a close eye on them until the edges turn golden and cookies appear set.
5. Cool and Enjoy: Carefully take the cookies out of the air fryer and allow them to cool on a wire rack. They will firm up nicely as they cool, creating that perfect chewy texture.
